Visiting London? You’ve Got to Stop by Pophams Bakery

After years working in catering departments in various Formula 1 teams, traveling around the world, and learning about different cooking cultures in every place he visited, Ollie Gold decided to turn his knowledge (and passion) into a business. His business—Pophams Bakery—turned out to be an innovative spin on traditional Viennoiserie baking techniques—drawing from his traveling experience.

“Pophams is small bakery filled with heart and passion,” relayed Gold with Elysia Catering’s blog.

“We aim to be a perfect haven for locals of Islington but also the ultimate destination for our beautifully unique pastries,” he added, explaining that the name Pophams comes from the street they are just situated off, Popham Street. “There is a great sense of community around us and we love being at the heart of it.”

From their very first Bacon and Maple, Pophams has evolved and with it their ever-changing menu. The bakery is known for continuously trying out new flavor combinations and techniques, offering exciting combinations for a growing audience.

As of June 2019, they’ve opened a second site in London Fields, where they have also evolved their food offering to include delicious hand-made pasta led by Executive Chef Phil King.

“The difference between an authentic handmade pastry and an industrially produced one is passion,” says Gold. “When you eat a good handmade pastry, you can feel all the passion, hard work, and the selected ingredients through it’s rich flavor. The time it takes depends on the kind of pastry and its complexity, but it can take from a few hours to an overnight process. We prepare our croissant dough the day before and giving its final touch the next morning (18-20 hours later).”
