As we mentioned, using chopsticks for sushi is optional. If you want to dip sushi in condiments, grab it with the chopsticks upside down, then dip in the sauce. This requires some practice, so you can rather use your hands. The process is similar. The reason for turning it upside down is to prevent the rice from absorbing too much sauce.

Ordering and Eating

When in a restaurant, you will typically get what’s best at the moment. You can order a specific item but it will often be pricier. One option is to order the chef’s recommendation but be prepared to pay for the best food.

At chain sushi restaurants, you can get the items from pictures and know exactly what to expect. It’s considered not polite to leave sushi in front of you too long as it will change texture and temperature.

Not many Japanese get to enjoy the highest level sushi restaurants, so if you want to eat what the locals eat, skip the priciest places.
