Tsuta is known for infusing unique elements into their ramen, such as truffles, truffle oil, porcini mushrooms, and balsamic vinegar.

Chuka Soba Ibuki

Most ramen is served with a clear broth, but Chuka Soba Ibuki does things a little differently. The restaurant is famous for using dried sardines, known as Niboshi, to create a thick, umami soup that almost feels creamy. Depending on the day, more than 14 different kinds of dried fish from around Japan may be used in the preparation of the broth.

Pork is a traditional ingredient in most ramen, featuring in both the broth and the topping. Those who are not a fan of the white meat should visit Ramen Yamaguchi which specialises in chicken-based ramen, using a famous Japanese breed. In contrast to other ramen, the chicken broth keeps the dish much lighter, enabling you to easily finish the entire bowl!
