“I must admit I’ve always been fascinated by luxury hotels and all of the things that go into creating that perfect five-star guest experience,” says Gillingham. “There are so many variables involved and I just love when it is executed flawlessly. It’s an art form and I want to give people a closer look at it.”

The resort boasts multiple pools and most feature a bar. As it is all-inclusive, this means you can swim up to the bar and get a pina colada without actually having to leave the pool. Of course, when you do leave the pool, you’ll want to lie down on a sunbed and soak up the fiery Mexican sunshine.
